I originally hail from Philadelphia, PA, and graduated from Roman Catholic High School in 1981. I worked for a few years in the city, but heard the calling of the United States Army. I served 20 years, 8 months and 13 days in the United States Army with the past 16 years involving food safety, sanitation audits and quality control. During the first year of my career I served in the enlisted ranks of the Pennsylvania US Army Reserves as an Indirect Fire Infantryman, Military Occupational Specialty (MOS) 11C in Bristol, PA. I later joined the Regular Army and served 4 years in MOS 11C. My first active duty assignment was with the mechanized infantry at Fort Carson Colorado. My final assignment in MOS 11C was as a paratrooper with the 82 Airborne at Fort Bragg, NC. In 1987, I reclassified into MOS 91R, Veterinary Food Inspector, and my first duty assignment was the Operations and Training Noncommissioned Officer (NCO) for the US Army Medical Activity (USA MEDDAC) in Fort Bragg, NC. I next went on to serve overseas an in-plant food safety and quality assurance inspector with the Veterinary Detachment Europe and procured fresh food items such as beef, poultry, eggs, fresh fruits and vegetables, for our troops stationed overseas. I served my final two enlisted assignments as the Noncommissioned Officer In Charge (NCOIC) of a Department of Defense (DOD) Food Cold Storage operation know as the Philadelphia Supply Point, and lastly as the NCOIC of the food inspection operation at Ft. Dix, NJ Branch. I aspired to become a warrant officer and graduated from the Warrant Officer Candidate School and the Officer Basic Course in 1995. My first assignment was the Chief, Food Hygiene and Quality Assurance for the Peninsula Branch, and was later assigned as the District Warrant Officer, both under the Mid Atlantic District Veterinary Command, Ft. Eustis Virginia. I next served as the Consumer Safety Officer at the Defense Supply Center in Philadelphia and managed the Hazardous Food and Nonprescription Drug Recall Program. My final military assignment was with the Northeast District Veterinary Command at Fort Monmouth, NJ and served as the Chief, Food Hygiene and Sanitation. I retired as a Chief Warrant Officer Three on September 30th, 2004. HIGHLIGHTS OF QUALIFICATIONS: hands-on experience since 1987 in: - Consulting, training and program development in the areas of food safety, security and quality assurance.
- Food safety audits of commercial food manufacturers and distribution centers in the United States and overseas utilizing the FDA Food Code, the Current Good Manufacturing Practices, and Hazard Analysis and Critical Control Plan principles.
- Liaison work between corporate levels of the Department of Defense, the food industry and the FDA and the USDA in matters concerning food safety and security.
AUDITING EXPERIENCE - Internally audited food facilities and provided corrective action recommendations which enabled customers to exceed the minimum standards required by 3 party auditors.
- Performed 100’s of food safety audits of commercial food manufacturers and distribution centers in the United States & overseas (i.e. Germany, Cuba, Jamaica, and Portugal).
- Plant experience includes: caterers, restaurants, warehouses, bottled water, ice, Low Acid Canned Foods, fresh fruits and vegetables, dairy, meat, seafood, beverages and bakeries.
LIAISON - Coordinated a timely exchange of critical information concerning hazardous foods with the FDA and the USDA resulting in the worldwide notification of military customers.
- Accomplished first time food safety audits, for military customers, of several Jamaican food processors through coordination with the Jamaican Bureau of Standards and the USDA Animal and Plant and Health Inspection Service (APHIS).
CONSULTING / TRAINING - Certified ServSafe® Instructor and Registered ServSafe® Examination Proctor for the National Restaurant Association Educational Foundation.
- Served as a consultant and provided in-plant food safety audit training to the U.S. Air Force Public Health Officer and staff members at Lajes Field on the Azores Island of Portugal.
- Personally trained 7 Army Veterinarians to perform food safety audits. Continuously trained and updated civilian and military employees in food safety and quality assurance subjects.
Now: After retiring from the military, I started my own food safety consulting business and have developed food safety programs and have provided training for numerous retail, wholesale and food distribution operations. I use the vast, hands-on experience I gained from conducting hundreds of food safety audits and facility inspections of commercial food manufacturers and warehouses in the United States and overseas (i.e. Germany, Cuba, Jamaica, Portugal, Japan) to benefit my customers.
